Sometimes after hiking, I like to reward myself. I call it “Re-Carbing.” (I know it makes no sense, but still, don’t judge.) When I feel the need for a re-carb, there’s only one place I want to go: Du-Par’s.

 

Esquire magazine called Du-Par’s pancakes the best in America. And friends, Esquire magazine did not lie. I don’t know what it is, but these pancakes are like crack. Honestly, I’ve never even liked pancakes that much. But I can mack on these babies.

 

Here’s how it goes: you order yourself a stack. When it arrives, there are two small pitchers on the side. One pitcher holds warmed maple syrup. The other? Melted butter. I’m not kidding. You pour that butter right over your pancakes, then pour the syrup and yee-haw! You’ve got yourself some of the best danged pancakes in America.

 

I haven’t had them in a while, and when I found this photo on my phone I just about drooled all over myself. The picture doesn’t do justice. But trust me. The next time you’re in L.A., do yourself a favor and head on over to Du-Par’s for some pancakes. After all that whatever-it-is-you’ve-been-doing, you’ll probably be in need of a re-carb. And you can then judge for yourself.
